Saute onion and then add chicken, tomatoes, and spices. In a separate pan heat chicken stock and mole sauce until smooth. In a lasagne pan, layer dish as follows:
mole sauce on bottom
then one layer of tortilla
chicken/tomato mixture
mole sauce
cheese
Repeat until you reach the top of the pan or run out of ingredients. The top layer should be tortilla, with mole sauce and then cheese. Bake 30-40 minutes at 350 F. Serve with sour cream if desired.
