Sweet Potato Casserole

Ingredients:

6 Medium Size Sweet Potatos (well, I usually get large, thick ones)
1/2 Cup Sugar
2 Eggs
1 tsp. Vanilla extract
1/3 Cup milk
1/2 Cup butter

For topping
2/3 Cup firmly packed brown sugar
2/3 Cup  finely chopped Pecans
4 tblsp. flour
2 tblsp. butter

Steps:

Boil sweet potatos for 60 minutes, until soft all over.  Let cool (I usually put them in the fridge).  Peel and mash.  Combine them with sugar, eggs, milk and butter.  Beat at medium speed until smooth.

Spoon into a lightly greased 12x8x2 baking dish.

Preheat oven to 350 Degrees F.

Combine brown sugar, pecans and butter.  Sprinkle over casserole.

Bake for 30 minutes.  Great reheated.
